This 3 ingredient spinach & artichoke dip will not only blow your mind with flavor, but it’s also Trim Healthy Mama approved and Keto friendly!
September is finally here, and with it have come our fall rains. Not only has it been steadily raining for 3 days, now, but we’ve also been watching the path of Tropical Storm Gordon as it entered the Gulf of Mexico.
Luckily, it doesn’t look like we’re in the path, but for a day or two, we weren’t quite so certain. Since most of my town is still recovering from Hurricane Harvey, it’s been stressful while we waited for some solid news. I don’t know about you, but when I get stressed, I eat. I know. That’s the
habit, but it’s true. And since all I was doing this week was listening to heavy rains and watching newscasts, the snacking bug hit me hard.
it’s pretty easy to stay on track, even when you want to stress eat.
3 Ingredient Spinach & Artichoke Dip Recipe

If you’re on the THM plan like me, this dip is an “S” food. We’ve been pairing it with some pork rinds, which is amazing, but I’m about to stuff the rest into some small sweet peppers and enjoy them that way!
If you’re not on the THM plan, this dip would also be Keto-friendly and mostly paleo, as well.
1 block of cream cheese
1/2 bag of chopped, frozen spinach
1 can of artichoke hearts, roughly chopped
seasoning to taste
In a medium saucepan, add your frozen spinach and let it start to cook down over medium-low heat. Wait for the spinach to start to heat up, then add your cream cheese. As the cheese melts, add your artichoke hearts and stir until well mixed.
I seasoned mine with a little salt and pepper, so taste it and see if yours needs any before serving it.
Once it’s done, you can transfer it all to a bowl and enjoy it with your favorite chips or vegetables.
My family enjoyed them with some pork rinds to stay on plan, but it’s a great dip for anyone, THM or not!
