I am not a morning person. Never have been, probably never will be.
But Charlotte is up at 6:30 most days, bouncing around like she drank a triple espresso, expecting to be fed. And I know, deep in my bones, that if I don't give her a real breakfast she'll be starving by 9 and melting down by 10.
So we've developed a system. A collection of breakfasts that get made even when I'm barely awake. They don't require much thinking, they actually fill us up, and most of them can be prepped ahead.
If you're fighting the same morning battle, let me share what works.
Overnight oats, seriously
I know, overnight oats are everywhere on the internet. There's a reason.
You mix them up the night before and they're ready the second you stumble into the kitchen the next morning. No cooking. No standing over a stove. Just pull out of the fridge, grab a spoon, done.
My basic recipe in a jar:
- Half cup rolled oats
- Half cup milk of choice
- A spoonful of yogurt
- A drizzle of maple syrup or honey
- Pinch of salt
Stir, lid on, into the fridge. In the morning, top with whatever fruit you have. Berries, banana, apples with cinnamon. Nuts or seeds if you want extra staying power.
I make three jars on Sunday night and we're covered through Wednesday. The texture isn't for everyone but Charlotte actually prefers them to hot oatmeal now.
Egg cups (meal prep hero)
Crack a dozen eggs into a bowl. Whisk with a splash of milk and some salt. Stir in whatever you have: cooked sausage, diced ham, spinach, cheese, leftover veggies from dinner.
Pour into a greased muffin tin. Bake at 375 for about 20 minutes until set.
Makes 12 egg cups. They last five days in the fridge. Reheat 30 seconds in the microwave.
These are so versatile. Charlotte eats them plain. I like mine with hot sauce. My husband eats three before he leaves for work. Everyone's happy, no one made breakfast at 7am.
Freezer breakfast burritos
This takes an hour on a Sunday but saves you twenty mornings.
Scramble a dozen eggs. Cook a pound of breakfast sausage. Shred some cheese. Have a stack of large tortillas ready.
Fill each tortilla with eggs, sausage, cheese, and whatever else. Wrap tight in foil. Put all the wrapped burritos in a freezer bag and freeze.
In the morning, microwave one for about a minute, flip, another minute. Done. Real breakfast in the time it takes to pour coffee.
You can add salsa, black beans, avocado, whatever. Make them how you like them. They freeze well for a couple months.
Yogurt parfait bar
This isn't really a recipe. It's a strategy.
On Sundays I put out a big container of plain Greek yogurt, a jar of granola, and whatever fruit we have that week. Everyone makes their own parfait in the morning.
Charlotte layers her yogurt, then fruit, then granola. I do mine with a drizzle of honey and some almond butter. Husband adds chia seeds because he's been reading health blogs again.
The whole thing takes two minutes, there's no cooking, and everyone gets exactly what they want.
Smoothie packs in the freezer
Similar idea, prepped once, used many times.
Get some freezer bags. Fill each one with your smoothie ingredients: a handful of spinach, some frozen berries, half a banana, a scoop of protein powder if you want. Don't add the liquid yet.
Freeze flat. When you want a smoothie, dump one bag into the blender, add milk or water, blend, pour.
Five minutes from wake-up to a smoothie in your hand. Great for days when everyone is running different directions.
Baked oatmeal for slow mornings
This one takes a little more effort but feeds us for two days.
Mix together:
- 3 cups rolled oats
- 2 cups milk
- 2 eggs
- Quarter cup maple syrup
- Teaspoon of baking powder
- Pinch of salt
- A cup of whatever fruit you want (berries are our favorite)
Pour into a greased 9x13 pan. Bake at 375 for 35 minutes until set and golden on top.
Cut into squares. Eat warm with a splash of milk. Store leftovers in the fridge and reheat all week.
This tastes like dessert but it's basically just oatmeal. Charlotte doesn't know the difference. Don't tell her.
Toast that feels like breakfast
Sometimes I just need something fast. Toast is the answer, but not sad toast.
Avocado toast with flaky salt and a fried egg on top. Peanut butter toast with banana slices and a drizzle of honey. Cream cheese toast with smoked salmon, if you're feeling fancy.
Tortilla toast is a thing in our house too. Crisp up a tortilla in a dry pan, spread with cream cheese, top with smoked salmon or tomatoes. It's fancier than bread toast with about the same effort.
Smoothie bowls when you're sick of drinking them
This is just a smoothie that's thicker so you can eat it with a spoon. Use less liquid. More frozen fruit. Add a banana for thickness.
Top with granola, sliced fruit, chia seeds, nut butter, whatever. It's a real breakfast that feels like a treat.
What NOT to do
I'll save you some time. These never worked for us:
- Anything requiring precise timing (the eggs get cold before the toast is done every time)
- Anything that needs a special pan I don't already own
- Anything labeled "protein pancakes" from a fitness blog
- Anything my kid has to learn to like
If it requires warm-ups, it's not a real morning breakfast.
The secret isn't the recipes
It's prep.
Sunday evening, spend 30 minutes getting something ready for the week. Whatever it is. Overnight oats. Egg cups. A bag of smoothie packs.
Your Monday-through-Friday mornings get so much easier when something is waiting for you in the fridge.
Mornings feel impossible until you realize they don't have to be. A little planning on Sunday night changes everything.
